Emily's Favorite Chili Recipe

Emily loves this recipe and we usually cook together to make it. It's from the Better Homes and Gardens New Junior Cookbook.

Rodeo Chili (the way we cook it)

8 oz or more of ground beef

1 15 oz can kidney beans

1 14 1/2 oz can diced tomatoes, undrained

1 15 oz can chili beans, undrained
1 medium green sweet pepper (~ 3/4 C chopped)
1 medium onion (tonight we used a red onion) (~ 1/2 C chopped)
1 cup tomato juice
1 1/2 tsp chili powder
shredded cheddar cheese and sour cream to individual liking, when served


Brown ground beef in medium or large pot--you'll need a lid, too. Drain fat if you want to.

Add green pepper, canned tomatoes, onion, tomato juice, and chili powder and stir till mixed. Bring to boil, then lower to simmer and cover pan. Cook for 10 minutes.

Add drained kidney beans and undrained chili beans to saucepan, stir, cover and cook for 10 minutes or till heated through.

Serve with shredded cheddar cheese and sour cream on the side. Makes about 5 cups, or 4 servings. Yum!
